Without fish or meat, but with delicious saffron, braised dried fruit, crunchy almonds, caramelized apples, fruity orange and green pistachios. Served warm and just terribly good.

And best of all: In the pressure cooker, the breakfast paella is ready in just 5 minutes cooking time. I'd bet the next Sunday morning is a bit sunnier, right?

And here's the recipe for the 5-minute breakfast paella from the pressure cooker

for at least 4 people

Ingredients:

1 tbsp margarine (non-vegan can also use butter)
225 g risotto or paella rice
250 ml pear juice
250 ml water
80 g raisins
150 g mixed dried fruit, chopped
3 tbsp almonds
1/2 tsp cinnamon
1/2 tsp saffron threads
1 pinch of vanilla powder (or a piece of vanilla bean)
1 pinch of salt
grated peel of 1 lime
1 pinch of chilli powder
2 tbsp of sugar
2-3 apples
1 dash of pear juice
2 oranges
optional 2 tbsp chopped green pistachios for decoration

And this is how it works:

Heat a pressure cooker and melt the margarine or butter in it. Add the rice and sauté for 2-3 minutes.

Add water and pear juice and stir in the raisins, dried fruit, almonds, cinnamon, saffron, vanilla, salt, lime zest and chilli powder. Close the pressure cooker at the highest setting heat. Once the lid has closed, switch back to a very small level and cook for 5 minutes. Then leave the pot on the stove for another 1 minute. Evaporate the pressure cooker, stir in the paella and leave to infuse for 1 minute.

In the meantime, allow the sugar to melt in a pan. Core the apples and dice with peel. Fry the apple cubes in the caramel and deglaze with a small dash of pear juice if necessary.

Peel the oranges generously and trigger the fillets.

Serve breakfast paella in serving bowls and with the caramelized apples topping orange fillets and chopped pistachios.

Tips:
The breakfast paella is kept in an airtight container for several days in the refrigerator.

To warm, place the desired portion with a dash of pear juice in a small saucepan and heat briefly with medium-high stirring

The breakfast laella also tastes cold as a dessert and can be wonderfully served with a scoop (vegan) ice cream.
